Wine at Cas Gasi

Cas Gasi’s wine list is a lot like the hotel. Not too big, very refined and completely unpretentious. Cas Gasi’s sommelier, Alberto Ruiz, selects a few of his favourites and matches them with the perfect dish from the summer 2015 menu.

The Chocolate Block – South Africa – An exotic and vibrant vintage with an iron edge running alongside the inky core of prunes, mulberries, cloves and boasting floral notes. Firm ripe tannins on the palate covered by plums, blackberries and olive tapenade. Textured, composed and seamless in style.

Match with: Beef tenderloin served with its own reduction in balsamic and local red wine.

Tignanello 2011 – Antinori – The 2011 Tignanello is an intense ruby red colour with purple highlights. It’s ripe on the nose with notes of dark fruit and much underlying freshness on the aromatic finish; plum fruit dominates the aromatic gamut along with cherries, and the aromas evolve with vigour and balance towards sensations of mint and liquorice. On the palate, though still young, the wine is ready and inviting, rich and harmonious; the excellent balance of flavours are thanks to the tonic acidity and the solidity and suppleness of the tannins. The finish and aftertaste are rich and savory and are characterised by a sweet persistence and length.

Match with: Black Angus tagliata served with fresh rocket and Parmigiano cheese.

Ibizkus 2014 – Ibiza – The 2014 Ibizkus is a light rosé wine with a flowery note on entry followed by raspberry notes. The second note expresses lily flowers and liquorice. In the mouth this wine is full, lively and generous. The mid-palate is intense and spicy, bringing to mind saffron flowers. The long finish is distinctive of a fine rosé.

Match with: Selected rice dishes or original mixed salads.
